Almond Rhubarb Puff Tarts



1 puff pastry sheet
1 pound (500g) rhubarb
1 egg
1/2 cup (10cl) of whipping cream
1/2 cup (40g) ground almonds
2/3 cup (120g) caster sugar
1 tablespoon of vanilla sugar
Slivered almonds

Directions
1. In advance: Peel the rhubarb stalks, cut into chunks, sprinkle with 1/3 cup (50g) sugar, and allow to drain for 1 hour to 1 day.

2. Preheat your oven to 360°F (180°C). Roll out the puff pastry sheet and line the bottom of a tart pan, prick the dough and cover with ceramic pie weights (or dry white beans). Blind bake the tart shell for 10 minutes.

3. Meanwhile, mix egg, almonds, cream, vanilla sugar and 2 1/2 tablespoons (30g) sugar.

4. Pour this mixture over the pre-baked pie shell and cover with pieces of drained rhubarb.

5. Sprinkle remaining sugar and slivered almonds before baking for 15 minutes.

Creamy Rhubarb Pie



150 g butter
1 dl sugar
1 egg
2 dl wheat flour
1 dl potato flour
1 teaspoon baking powder

Filling:

5 dl rhubarb pieces
2 dl heavy cream
1 egg
2 teaspoon vanilla sugar
1 dl sugar

Cream together the butter and sugar. Add the egg, stirring well. Mix the flour and baking powder and add to the batter. Spread the dough round flan on the bottom, lift the edges a little.

Peel the rhubarb and cut them into thin pieces. Mix the cream, sugar, eggs and rhubarb pieces. Pour the mixture over the pie.

Bake 200 degrees C approx. 30-40 min. until the surface has got a little bit of color.

Rhubarb Vanilla Pie



Dough:
150 g butter
1 dl sugar (0.6 cup)
3 dl wheat flour
(1 teaspoon vanilla sugar)
0,25 dl milk or cream

Filling:
1 liter rhubarb
2 dl vanilla flavored curd
1 egg
1/2 dl milk
2 tbsp sugar

On the top:
cinnamon, brown sugar

After baking:
powdered sugar

Cream together the butter, flour and sugar. Add milk (or cream). Spread into a greased baking dish.

Mix the ingredients of the filling. Pour to the baking dish over the dough.

Bake in the oven +200C/392 F, 20 to 30 minutes.

After baking, sprinkle top with powdered sugar.

Rhubarb Tart





4 eggs

4 dl sugar

3 dl milk

150 g butter

6 dl wheat flour

3 tsp baking powder

1 liter rhubarb pieces

sugar, cinnamon

Beat the eggs and sugar. Melt the butter, mix it with milk. Add to the egg foam sugar alternately butter-milk mixture and flour with baking powder.
Pour into a casserole dish, spread on top the rhubarbs. Sprinkle with sugar and cinnamon.

Bake at +200C for half an hour.

Serve with vanilla sauce or with ice cream.

*Note: If you havenīt rhubarbs, use apples or berries (if you use berries, leave cinnamon away).

A multi taste pie, recipe is same like above (Rhubarb tart):



At the left itīs a rhubarb pie, at the middle an apple pie and at the right...



...a lingonberry pie. Three different pies in one pie.

Sweet rhubarb soup



6 stems of rhubarb, about 700 g
8 dl of water
2 dl sugar
4 tbsp potato flour

Rinse the rhubarb and cut them into pieces.
Boil water and sugar and add rhubarb. Boil until rhubarb soften.
Mix the potato flour with a small amount of water and add to the kettle in a thin strip with gently stirring. Let it boil fast.
Pour the soup into the bowl to cool and sprinkle some sugar on the surface.
Serve with milk or vanilla sauce.

Sweet, slightly tart. Easy and fast to make. If you try it, donīt forget to eat it with some milk product.
